APPLE GALETTE W/CHINESE 5 SPICE RECIPE
This is an easy recipe for a free form pie/galette with an apple and Chinese five spice filling. Paul’s friend did an incredible job on on HIS VERY FIRST BAKE EVER! You can, too!

EASY FREEFORM APPLE PIE (APPLE GALETTE)
-makes enough for two galettes
MATERIALS
-mixing bowl
-whisk
-cling film
-rolling pan
-sheet pan with parchment lining
-knife
-cutting board
-brush
-cooling rack
DOUGH
-1 2/3 cups (225 grams) all-purpose flour
-1 tablespoon sugar
-1 teaspoon salt
-16 tablespoons or 2 sticks (225 grams) of cold butter
-1/2 cup (120 milliliters or grams) cold water
FILLING per pie (double amount for 2 pies)
-1 apple
-about 1/4 cup of granulated sugar (40 grams) or brown sugar (53 grams)
-a pinch of salt
-1 teaspoon of Chinese five spice
-1 teaspoon of all-purpose flour or cornstarch
PIE:
-1 egg
-1/8 cup (25 grams) granulated sugar
INSTRUCTIONS
For the dough:
-Whisk the flour, sugar, and salt in a mixing bowl.
-Cut the butter into the flour, sugar, and salt mixture until the consistency is pebble-like with some slightly larger chunks of butter (either by hand, or pulsed in a food processor)
-Add the cold water until the mixture is just mixed.
-Split in half and separate the halves.
-Shape both into discs, wrap them in cling film, and place them in a refrigerator.
-Allow them to chill for at least 30 minutes or overnight.
For the filling:
-Peel and core the apple. Cut thinly or dice the rest of the apple.
-Add the apple pieces into a bowl, a pinch of salt, and the flour/cornstarch.
-Add the sugar until it just coats the apples. You may not use all of the sugar. Add more sugar if needed.
-Allow this to sit for at least 30 minutes.
For the pie:
-Preheat the oven to 400F/200C/Gas 6
-Place a sheet of cling film on your work surface.
-Unwrap your dough, place it in the middle of the cling film, and place another sheet of cling film on top.
-Use the rolling pin to roll out dough into a circle (about 8 to 9 inches across) until it is at least 1/8th of an inch. If any cracks appear, try to push the dough back together.
-Remove the top sheet of cling film, grip the bottom cling film, and carefully, flip the dough onto the sheet pan.
-Keeping about 2 to 3 inches on all sides clear, spoon the apples onto the dough.
-Fold the empty dough border up over the apples on all sides.
-Beat the egg and brush the egg onto the crust.
-Sprinkle sugar on the crust.
-Bake for 35 minutes or until the crust is a golden brown.
-Allow to cool for at least 15 minutes.
-Serve warm and ENJOY!
